Fijian Kokoda
Preparation time: 30 minutes (after marinating the fish)
Ingredients:
- 400g Spanish mackerel, cut into 1.5cm cubes
- White vinegar, for marinating the fish
- 2 tablespoons lime juice
- ½ cup fresh coconut crema
- 2 tablespoons diced tomato
- 2 tablespoons finely diced onion
- 1 tablespoon finely chopped coriander leaves
- 1 tablespoon sliced spring onion
- 1 birds-eye chili, deseeded and finely chopped
- Salt and pepper, to taste
Instructions:
- Place the fish pieces and vinegar in a bowl, ensuring the fish is covered. Cover the bowl and refrigerate for at least 2 hours.
- Once marinated, rinse off the vinegar and gently combine the fish with all other ingredients.
- Season to taste and serve.
